I have been seeing so many breakfast bars and granola bar recipes floating around the net and so wanted to try something that will be good for my son to carry in his lunch-box ..
Granola bars would be a little difficult to prepare due to lack of all the ingredients but I thought I would try these breakfast bars which seemed to be a cross between a cake and breakfast bar...
and it being a healthy option was a plus point...
I have this taken this recipe from the Rachael Ray site....I have done a few modifications to suit my taste...
- 1 1/2 cups oatmeal (instant or rolled oats both work well)
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large ripe banana, mashed
- 2 tablespoons unsalted butter, melted
- 1 egg, beaten
- 1 cup milk
- Choco-chips for topping
- 1 tsp vanilla essence.
Pre-heat the oven to 350ºF.
Grease an 8-inch x 8-inch cake pan.
Mix all of the ingredients into a large bowl and stir until well combined.
Pour the mixture into a prepared cake pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let cool for 5-10 minutes before cutting into squares.
The squares can be stored, covered, in the refrigerator for up to 5 days. Makes 6-8 squares.
